3 nights in Siem Reap is ideal — covering Angkor Wat at sunrise, the Bayon and Ta Prohm in detail, and Banteay Srei (further afield). 2 nights is workable but rushed.
It can be — but with the right guide and timing (sunrise at Angkor Wat, then quieter temples mid-morning) and after-hours private access, you can experience the temples beautifully.
